Ingredients

  • 1 cup sushi rice
  • 1 1/2 cups water
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1/2 lb fresh yellowfin tuna, cubed
  • 1 tbsp soy sauce
  • 1 tsp sesame seeds
  • 1/2 avocado, sliced
  • 1/4 cup cucumber, diced
  • 1/4 cup edamame
  • 1/4 cup shredded carrots
  • 1 tbsp green onions, chopped


Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Cook the rice with water in a rice cooker or pot until tender.
  3. Mix the cooked rice with sesame oil and rice vinegar, then set aside to cool.
  4. In a bowl, combine the cubed tuna with soy sauce and sesame seeds.
  5. Assemble the bowl by placing the sesame rice at the bottom.
  6. Top with marinated tuna, avocado, cucumber, edamame, carrots, and green onions.
