Description
A fresh and healthy herb garden dip made with mixed greens, perfect for snacking or as a side dish.
Ingredients
- 2 cups mixed greens (spinach, kale, arugula)
- 1/2 cup fresh parsley
- 1/4 cup fresh dill
- 1/4 cup fresh mint
- 1/2 cup Greek yogurt
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Wash and dry all greens and herbs thoroughly.
- In a food processor, blend mixed greens, parsley, dill, and mint until finely chopped.
- Add Greek yogurt, lemon juice, garlic, salt, and pepper. Blend until smooth.
- Drizzle in olive oil while blending to emulsify.
- Transfer to a serving bowl and chill for at least 30 minutes before serving.
Notes
- Adjust salt and pepper to taste.
- Use full-fat Greek yogurt for a creamier texture.
- Serve with fresh vegetables, pita bread, or crackers.
