Description

A fresh and healthy herb garden dip made with mixed greens, perfect for snacking or as a side dish.


Ingredients

  • 2 cups mixed greens (spinach, kale, arugula)
  • 1/2 cup fresh parsley
  • 1/4 cup fresh dill
  • 1/4 cup fresh mint
  • 1/2 cup Greek yogurt
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil


Instructions

  1. Wash and dry all greens and herbs thoroughly.
  2. In a food processor, blend mixed greens, parsley, dill, and mint until finely chopped.
  3. Add Greek yogurt, lemon juice, garlic, salt, and pepper. Blend until smooth.
  4. Drizzle in olive oil while blending to emulsify.
  5. Transfer to a serving bowl and chill for at least 30 minutes before serving.
