A simple and healthy side dish featuring roasted potatoes seasoned with za’atar spice for a flavorful twist.
Ingredients
- 1.5 lbs baby potatoes, halved
- 2 tbsp olive oil
- 1 tbsp za’atar spice
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp fresh parsley, chopped
Instructions
- Preheat oven to 400°F (200°C).
- Toss potatoes with olive oil, za’atar, salt, and pepper.
- Spread on a baking sheet in a single layer.
- Roast for 30-35 minutes, flipping halfway, until golden and crispy.
- Garnish with fresh parsley before serving.
Notes
- For extra crispiness, soak potatoes in cold water for 10 minutes before roasting.
- Za’atar can be replaced with dried thyme if unavailable.
