Ingredients
- 2 cups spelt flour
- 1 tsp salt
- 1 tbsp honey
- 1 tbsp olive oil
- 1 tsp active dry yeast
- 1 cup warm water
- 2 tbsp mixed fresh herbs (rosemary, thyme, basil)
Instructions
- Mix yeast with warm water and let sit for 5 minutes.
- Combine flour, salt, and herbs in a bowl.
- Add honey, olive oil, and yeast mixture to the dry ingredients.
- Knead the dough for 10 minutes until smooth.
- Let the dough rise for 1 hour in a warm place.
- Shape the dough into a loaf and place it on a baking tray.
- Bake at 375°F (190°C) for 30 minutes.
- Let cool before slicing.

- Store in an airtight container for up to 3 days.
- For extra flavor, brush the loaf with olive oil before baking.
