Description

A healthy and high-protein lasagna made with chickpea pasta, packed with nutrients and flavor.


Ingredients

  • 2 cups chickpea pasta
  • 1 cup marinara sauce
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella
  • 1/4 cup grated Parmesan
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp dried basil


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook chickpea pasta according to package instructions, then drain.
  3. In a bowl, mix ricotta, garlic, salt, pepper, and basil.
  4. Layer pasta, marinara sauce, and ricotta mixture in a baking dish.
  5. Top with mozzarella and Parmesan.
  6. Bake for 20-25 minutes until cheese melts and turns golden.
  7. Let cool for 5 minutes before serving.
