Description
A healthy twist on classic potato salad, packed with protein and flavor using Greek yogurt.
Ingredients
- 2 lbs potatoes, diced
- 1 cup Greek yogurt
- 2 hard-boiled eggs, chopped
- 1/4 cup red onion, finely diced
- 1/4 cup celery, chopped
- 1 tbsp mustard
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup fresh dill, chopped
Instructions
- Boil diced potatoes until tender. Drain and let cool.
- In a bowl, mix Greek yogurt, mustard, lemon juice, salt, and pepper.
- Add cooled potatoes, eggs, red onion, celery, and dill to the bowl.
- Toss gently to coat everything evenly.
- Chill for at least 30 minutes before serving.
Notes
- Use waxy potatoes for best texture.
- Adjust salt and pepper to taste.
- Add more Greek yogurt if a creamier texture is preferred.
