Ingredients
- 1 medium sweet potato, diced
- 2 eggs
- 1/2 avocado, sliced
- 1/4 cup black beans, rinsed
- 1 tbsp olive oil
- Salt and pepper to taste
- 1 tbsp chopped cilantro
- 1 tbsp crumbled feta cheese (optional)
Instructions
- Preheat oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, salt, and pepper. Roast for 20-25 minutes until tender.
- In a pan, cook eggs sunny-side up or scrambled.
- Assemble the bowl with roasted sweet potatoes, eggs, black beans, and avocado.
