A hearty and healthy casserole inspired by Amish Country traditions, perfect for holiday gatherings.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup whole wheat elbow macaroni, cooked
  • 1 cup low-fat cheddar cheese, shredded
  • 1 cup frozen mixed vegetables
  • 1/2 cup low-sodium chicken broth
  • 1/4 cup plain Greek yogurt
  • 1 tsp dried thyme
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix chicken, macaroni, cheese, and vegetables.
  3. In a separate bowl, whisk chicken broth, Greek yogurt, thyme, garlic powder, onion powder, salt, and pepper.
  4. Pour the liquid mixture over the chicken and pasta. Stir well.
  5. Transfer to a greased baking dish.
  6. Bake for 25-30 minutes until bubbly and golden.
  7. Let cool for 5 minutes before serving.
