A hearty and healthy casserole inspired by Amish Country traditions, perfect for holiday gatherings.
Ingredients
- 2 cups cooked chicken, shredded
- 1 cup whole wheat elbow macaroni, cooked
- 1 cup low-fat cheddar cheese, shredded
- 1 cup frozen mixed vegetables
- 1/2 cup low-sodium chicken broth
- 1/4 cup plain Greek yogurt
- 1 tsp dried thyme
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, mix chicken, macaroni, cheese, and vegetables.
- In a separate bowl, whisk chicken broth, Greek yogurt, thyme, garlic powder, onion powder, salt, and pepper.
- Pour the liquid mixture over the chicken and pasta. Stir well.
- Transfer to a greased baking dish.
- Bake for 25-30 minutes until bubbly and golden.
- Let cool for 5 minutes before serving.
Notes
- Substitute turkey for chicken if preferred.
- Use fresh vegetables instead of frozen for a crisper texture.
- Store leftovers in an airtight container for up to 3 days.
