Description

A healthy and delicious holiday dinner option featuring baked spinach and mushroom quesadillas.


Ingredients

  • 2 cups fresh spinach
  • 1 cup sliced mushrooms
  • 1 cup shredded cheese
  • 4 whole wheat tortillas
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a pan and sauté spinach and mushrooms until soft.
  3. Add garlic powder, onion powder, salt, and black pepper.
  4. Place tortillas on a baking sheet.
  5. Spread the spinach-mushroom mixture evenly on half of each tortilla.
  6. Sprinkle shredded cheese on top.
  7. Fold tortillas over and press lightly.
  8. Bake for 10 minutes or until golden brown.
  9. Cut into wedges and serve hot.
