A healthy and delicious holiday dinner option featuring baked spinach and mushroom quesadillas.
Ingredients
- 2 cups fresh spinach
- 1 cup sliced mushrooms
- 1 cup shredded cheese
- 4 whole wheat tortillas
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a pan and sauté spinach and mushrooms until soft.
- Add garlic powder, onion powder, salt, and black pepper.
- Place tortillas on a baking sheet.
- Spread the spinach-mushroom mixture evenly on half of each tortilla.
- Sprinkle shredded cheese on top.
- Fold tortillas over and press lightly.
- Bake for 10 minutes or until golden brown.
- Cut into wedges and serve hot.

- Use fresh spinach for best results.
- Substitute with any cheese of your choice.
- Add jalapeños for extra spice.
