Ingredients

  • 9 lasagna noodles
  • 1 lb lean ground turkey
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, sliced
  • 1 cup spinach, chopped
  • 24 oz marinara sauce
  • 15 oz low-fat ricotta cheese
  • 1 egg
  • 1 cup shredded mozzarella
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/4 tsp black pepper


Instructions

  1. Preheat oven to 375°F.
  2. Cook lasagna noodles according to package instructions. Drain and set aside.
  3. Heat olive oil in a pan. Add onion, garlic, and turkey. Cook until turkey is browned.
  4. Add bell pepper, zucchini, and spinach. Cook for 5 minutes.
  5. Stir in marinara sauce, oregano, basil, and black pepper. Simmer for 10 minutes.
  6. Mix ricotta cheese with the egg in a bowl.
  7. Layer noodles, turkey mixture, and ricotta in a baking dish. Repeat layers.
  8. Top with mozzarella cheese.
  9. Bake for 25 minutes or until cheese is melted and bubbly.
  10. Let cool for 5 minutes before serving.
