Description
A moist and healthy banana bread made with yogurt for added protein and reduced fat. Perfect for breakfast or a snack.
Ingredients
- 3 ripe bananas, mashed
- 1/2 cup plain yogurt
- 1/4 cup honey or maple syrup
- 2 eggs
- 1 tsp vanilla extract
- 1 1/2 cups whole wheat flour
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- In a bowl, mix mashed bananas, yogurt, honey, eggs, and vanilla.
- In another bowl, whisk flour, baking soda, cinnamon, and salt.
- Combine wet and dry ingredients. Fold in nuts if using.
- Pour batter into the pan. Bake for 50-60 minutes or until a toothpick comes out clean.
- Cool before slicing.
Notes
- Use very ripe bananas for sweetness.
- Greek yogurt works best for thickness.
- Store in an airtight container for up to 3 days.
