Description

A moist and healthy banana bread made with yogurt for added protein and reduced fat. Perfect for breakfast or a snack.


Ingredients

  • 3 ripe bananas, mashed
  • 1/2 cup plain yogurt
  • 1/4 cup honey or maple syrup
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup chopped nuts (optional)


Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, mix mashed bananas, yogurt, honey, eggs, and vanilla.
  3. In another bowl, whisk flour, baking soda, cinnamon, and salt.
  4. Combine wet and dry ingredients. Fold in nuts if using.
  5. Pour batter into the pan. Bake for 50-60 minutes or until a toothpick comes out clean.
  6. Cool before slicing.

Notes

  • Use very ripe bananas for sweetness.
  • Greek yogurt works best for thickness.
  • Store in an airtight container for up to 3 days.
