Description
A hearty and healthy celery root soup made in a crockpot, perfect for a comforting meal.
Ingredients
- 1 large celery root, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
Instructions
- Heat olive oil in a pan and sauté onion and garlic until soft.
- Transfer the onion and garlic to the crockpot.
- Add diced celery root, vegetable broth, salt, and pepper to the crockpot.
- Cook on low for 6 hours or until the celery root is tender.
- Blend the soup until smooth using an immersion blender.
- Stir in coconut milk and adjust seasoning if needed.
- Serve warm.
Notes
- You can substitute coconut milk with heavy cream if preferred.
- Garnish with fresh herbs like parsley or chives.
- Store leftovers in an airtight container for up to 3 days.
