Description

A delicious and healthy pasta bake made with imitated crab, vegetables, and a creamy sauce.


Ingredients

  • 8 oz whole wheat pasta
  • 1 cup imitated crab, chopped
  • 1 cup broccoli florets
  • 1/2 cup red bell pepper, diced
  • 1/2 cup low-fat milk
  • 1/4 cup Greek yogurt
  • 1/2 cup shredded low-fat cheese
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook pasta according to package instructions, drain, and set aside.
  3. Heat olive oil in a pan over medium heat. Add garlic and sauté for 1 minute.
  4. Add broccoli and red bell pepper. Cook for 3-4 minutes until tender.
  5. Stir in imitated crab, milk, Greek yogurt, salt, and black pepper. Cook for 2 minutes.
  6. Combine the cooked pasta with the sauce and vegetables.
  7. Transfer to a baking dish and top with shredded cheese.
  8. Bake for 15-20 minutes until cheese is melted and bubbly.

Notes

  • You can substitute imitated crab with real crab or shrimp.
  • Use any vegetables you prefer.
  • Store leftovers in the fridge for up to 3 days.
