Description
Quick and healthy casserole made in the Instant Pot with minimal effort.
Ingredients
- 1 lb boneless chicken breast, diced
- 1 cup brown rice
- 2 cups low-sodium chicken broth
- 1 cup diced bell peppers
- 1 cup diced zucchini
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp black pepper
- 1/2 tsp salt
Instructions
- Add all ingredients to the Instant Pot.
- Close the lid and set to high pressure for 8 minutes.
- Allow natural release for 5 minutes, then quick release.
- Stir well and serve hot.
Notes
- Use frozen vegetables for convenience.
- Adjust seasoning to taste.
- Store leftovers in an airtight container for up to 3 days.
