Description
A quick and healthy cauliflower soup made in the Instant Pot, ready in just 15 minutes.
Ingredients
- 1 head cauliflower, chopped
- 1 tbsp olive oil
- 1 small onion, diced
- 2 garlic cloves, minced
- 4 cups vegetable broth
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup unsweetened almond milk
Instructions
- Set Instant Pot to sauté mode. Heat olive oil.
- Add onion and garlic. Cook until soft.
- Add cauliflower, broth, salt, and pepper. Stir.
- Close lid. Set to high pressure for 5 minutes.
- Quick release pressure. Open lid.
- Blend soup until smooth with almond milk.
- Serve warm.
Notes
- Store leftovers in the fridge for up to 3 days.
- Freeze for up to 1 month.
- Garnish with fresh herbs if desired.
