Description

A quick and healthy cauliflower soup made in the Instant Pot, ready in just 15 minutes.


Ingredients

  • 1 head cauliflower, chopped
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup unsweetened almond milk


Instructions

  1. Set Instant Pot to sauté mode. Heat olive oil.
  2. Add onion and garlic. Cook until soft.
  3. Add cauliflower, broth, salt, and pepper. Stir.
  4. Close lid. Set to high pressure for 5 minutes.
  5. Quick release pressure. Open lid.
  6. Blend soup until smooth with almond milk.
  7. Serve warm.

Notes

  • Store leftovers in the fridge for up to 3 days.
  • Freeze for up to 1 month.
