Ingredients
- 1 lb Italian sausage
- 3 medium potatoes, diced
- 2 large carrots, sliced
- 4 cups fresh spinach
- 1 onion, chopped
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add Italian sausage and cook until browned, breaking it into pieces.
- Add onion and garlic, sauté until softened.
- Stir in potatoes, carrots, oregano, basil, salt, and pepper.
- Pour in chicken broth and bring to a boil.
- Reduce heat and simmer for 20 minutes or until potatoes are tender.
- Add spinach and cook for 2 more minutes.
- Serve hot.
