Ingredients

  • 1 lb Italian sausage (casings removed)
  • 2 medium zucchinis (sliced)
  • 1 cup diced tomatoes
  • 1/2 cup chopped onion
  • 2 cloves garlic (minced)
  • 1/2 cup shredded mozzarella cheese
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat.
  3. Add onion and garlic, sauté for 2 minutes.
  4. Add Italian sausage, cook until browned.
  5. Stir in zucchini, tomatoes, oregano, salt, and pepper. Cook for 5 minutes.
