Ingredients

  • 1 lb ground chicken or turkey
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 6 cups low-sodium chicken broth
  • 2 cups chopped kale or spinach
  • 1/2 cup diced carrots
  • 1/2 cup diced celery
  • 1/2 cup diced onion
  • 1/2 cup small pasta (like orzo or ditalini)
  • Salt and pepper to taste


Instructions

  1. Mix ground chicken, breadcrumbs, egg, Italian seasoning, and garlic powder. Form into small meatballs.
  2. In a large pot, sauté carrots, celery, and onion until softened.
  3. Add chicken broth and bring to a boil.
  4. Drop meatballs into the boiling broth and simmer for 10 minutes.
  5. Add pasta and cook until tender.
  6. Stir in chopped greens and cook for 2 more minutes.
  7. Season with salt and pepper.
