Ingredients
- 1 lb ground chicken or turkey
- 1/2 cup breadcrumbs
- 1 egg
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- 6 cups low-sodium chicken broth
- 2 cups chopped kale or spinach
- 1/2 cup diced carrots
- 1/2 cup diced celery
- 1/2 cup diced onion
- 1/2 cup small pasta (like orzo or ditalini)
- Salt and pepper to taste
Instructions
- Mix ground chicken, breadcrumbs, egg, Italian seasoning, and garlic powder. Form into small meatballs.
- In a large pot, sauté carrots, celery, and onion until softened.
- Add chicken broth and bring to a boil.
- Drop meatballs into the boiling broth and simmer for 10 minutes.
- Add pasta and cook until tender.
- Stir in chopped greens and cook for 2 more minutes.
- Season with salt and pepper.

- Use gluten-free breadcrumbs and pasta if needed.
- Swap kale for spinach for a milder taste.
