Ingredients

  • 1 lb lean ground beef
  • 1 cup diced onion
  • 1 cup diced bell pepper
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 cup whole wheat elbow macaroni
  • 1 cup shredded low-fat cheddar cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. Preheat oven to 375°F.
  2. Cook macaroni according to package instructions, then drain.
  3. Brown ground beef in a skillet over medium heat.
  4. Add onion, bell pepper, and garlic, cooking until softened.
  5. Stir in diced tomatoes, tomato sauce, Italian seasoning, salt, and pepper.
  6. Combine cooked macaroni with the meat mixture.
  7. Transfer to a baking dish and top with shredded cheese.
