Ingredients
- 1 lb lean ground beef
- 1 cup diced onion
- 1 cup diced bell pepper
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 1 cup whole wheat elbow macaroni
- 1 cup shredded low-fat cheddar cheese
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 375°F.
- Cook macaroni according to package instructions, then drain.
- Brown ground beef in a skillet over medium heat.
- Add onion, bell pepper, and garlic, cooking until softened.
- Stir in diced tomatoes, tomato sauce, Italian seasoning, salt, and pepper.
- Combine cooked macaroni with the meat mixture.
- Transfer to a baking dish and top with shredded cheese.
- Bake for 20 minutes or until cheese is melted and bubbly.
Notes
- You can substitute ground turkey for beef.
- Add mushrooms or zucchini for extra vegetables.
- Store leftovers in the fridge for up to 3 days.
