Description
A healthy and flavorful keto Cobb salad packed with protein, healthy fats, and fresh veggies.
Ingredients
- 4 cups chopped romaine lettuce
- 2 hard-boiled eggs, sliced
- 1 avocado, diced
- 1 cup cooked chicken breast, diced
- 4 strips bacon, cooked and crumbled
- 1/4 cup blue cheese crumbles
- 1/4 cup cherry tomatoes, halved
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Wash and chop the romaine lettuce, then place it in a large bowl.
- Arrange the hard-boiled eggs, avocado, chicken breast, bacon, blue cheese, and cherry tomatoes on top.
- Whisk together olive oil, lemon juice, salt, and pepper.
- Drizzle the dressing over the salad and toss gently.
- Serve immediately.

- You can store leftovers in an airtight container for up to 2 days.
- Substitute blue cheese with feta if preferred.
- For extra crunch, add toasted almonds or walnuts.
