Ingredients
- 1 cup pitted dates
- 1/2 cup almonds
- 1/4 cup shredded coconut
- 2 tbsp key lime juice
- 1 tsp lime zest
- 1 tbsp honey
- 1/4 tsp vanilla extract
- Pinch of salt
Instructions
- Blend dates and almonds in a food processor until finely chopped.
- Add shredded coconut, key lime juice, lime zest, honey, vanilla extract, and salt.
- Process until the mixture sticks together.
- Roll into small balls.
- Chill for 30 minutes before serving.
