Ingredients
- 2 cups whole wheat flour
- 1 cup almond flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup honey
- 1/4 cup coconut oil
- 2 eggs
- 1 cup unsweetened applesauce
- 1 tsp vanilla extract
- 1/2 cup grated carrots
- 1/2 cup grated zucchini
- 1/4 cup chopped nuts
- 1/4 cup dried fruits
Instructions
- Preheat oven to 350°F (175°C). Grease a cake pan.
- Mix dry ingredients in a bowl.
- In another bowl, whisk honey, coconut oil, eggs, applesauce, and vanilla.
- Combine wet and dry ingredients. Fold in carrots, zucchini, nuts, and dried fruits.
- Pour batter into the pan. Bake for 40-45 minutes.
- Let cool before serving.
