Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 lb ground turkey
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried oregano
- 1 tsp dried basil
- 6 cups chicken broth
- 1 (28 oz) can crushed tomatoes
- 2 cups spinach, chopped
- 1 cup cottage cheese
- 8 oz lasagna noodles, broken into pieces
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, cook until soft.
- Add ground turkey, cook until browned.
- Season with salt, pepper, oregano, and basil.
- Pour in chicken broth and crushed tomatoes, bring to a boil.
- Add broken lasagna noodles, cook until al dente.
- Stir in spinach and cottage cheese.
- Simmer for 5 minutes before serving.
Notes
- Use whole wheat lasagna noodles for extra fiber.
- Substitute ground beef if preferred.
- Add more broth if you prefer a thinner soup.
