Description

A healthy twist on classic lasagna with caramelized onions for added flavor.


Ingredients

  • 9 lasagna noodles
  • 2 tablespoons olive oil
  • 2 large onions, thinly sliced
  • 1 pound lean ground turkey
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups tomato sauce (no sugar added)
  • 1 cup part-skim ricotta cheese
  • 1 egg
  • 1 1/2 cups shredded part-skim mozzarella
  • 1/4 cup grated Parmesan cheese


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions.
  3. Heat olive oil in a pan and caramelize onions over medium heat for 15-20 minutes until golden.
  4. Add ground turkey, garlic, oregano, basil, salt, and pepper. Cook until meat is browned.
  5. Stir in tomato sauce and simmer for 5 minutes.
  6. Mix ricotta cheese with egg in a bowl.
  7. Layer noodles, meat sauce, ricotta mixture, and mozzarella in a baking dish.
  8. Repeat layers, ending with mozzarella and Parmesan on top.
  9. Bake for 25 minutes until bubbly and golden.
  10. Let rest for 10 minutes before serving.

Notes

  • Ground beef can replace turkey if preferred.
  • Use whole wheat noodles for extra fiber.
  • Lasagna can be refrigerated for up to 3 days.
