Description
A healthy twist on classic lasagna with caramelized onions for added flavor.
Ingredients
- 9 lasagna noodles
- 2 tablespoons olive oil
- 2 large onions, thinly sliced
- 1 pound lean ground turkey
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups tomato sauce (no sugar added)
- 1 cup part-skim ricotta cheese
- 1 egg
- 1 1/2 cups shredded part-skim mozzarella
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat oven to 375°F (190°C).
- Cook lasagna noodles according to package instructions.
- Heat olive oil in a pan and caramelize onions over medium heat for 15-20 minutes until golden.
- Add ground turkey, garlic, oregano, basil, salt, and pepper. Cook until meat is browned.
- Stir in tomato sauce and simmer for 5 minutes.
- Mix ricotta cheese with egg in a bowl.
- Layer noodles, meat sauce, ricotta mixture, and mozzarella in a baking dish.
- Repeat layers, ending with mozzarella and Parmesan on top.
- Bake for 25 minutes until bubbly and golden.
- Let rest for 10 minutes before serving.
Notes
- Ground beef can replace turkey if preferred.
- Use whole wheat noodles for extra fiber.
- Lasagna can be refrigerated for up to 3 days.
