Description

A healthy twist on classic lasagna, featuring chicken meatballs and whole wheat noodles.


Ingredients

  • 12 whole wheat lasagna noodles
  • 1 lb ground chicken
  • 1 egg
  • 1/4 cup breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 2 cups marinara sauce
  • 1 cup low-fat ricotta cheese
  • 1/2 cup shredded mozzarella
  • 1/4 cup grated Parmesan
  • 1 tbsp olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F.
  2. Mix chicken, egg, breadcrumbs, garlic powder, oregano, salt, and pepper. Form into small meatballs.
  3. Cook meatballs in olive oil until browned. Set aside.
  4. Boil lasagna noodles until al dente. Drain.
  5. Layer noodles, meatballs, marinara, and cheeses in a baking dish.
  6. Bake for 25 minutes or until bubbly.
  7. Let cool for 5 minutes before serving.

Notes

  • You can use turkey instead of chicken.
