Description
A healthy twist on classic lasagna, featuring chicken meatballs and whole wheat noodles.
Ingredients
- 12 whole wheat lasagna noodles
- 1 lb ground chicken
- 1 egg
- 1/4 cup breadcrumbs
- 1 tsp garlic powder
- 1 tsp dried oregano
- 2 cups marinara sauce
- 1 cup low-fat ricotta cheese
- 1/2 cup shredded mozzarella
- 1/4 cup grated Parmesan
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F.
- Mix chicken, egg, breadcrumbs, garlic powder, oregano, salt, and pepper. Form into small meatballs.
- Cook meatballs in olive oil until browned. Set aside.
- Boil lasagna noodles until al dente. Drain.
- Layer noodles, meatballs, marinara, and cheeses in a baking dish.
- Bake for 25 minutes or until bubbly.
- Let cool for 5 minutes before serving.
Notes
- You can use turkey instead of chicken.
- Add spinach for extra nutrients.
- Freeze leftovers for up to 3 months.
