Ingredients

  • 9 lasagna noodles
  • 2 cups low-fat ricotta cheese
  • 1 cup crumbled gorgonzola cheese
  • 1 egg
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups fresh spinach
  • 1 cup sliced mushrooms
  • 2 cups low-sodium marinara sauce
  • 1/2 cup grated parmesan cheese


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions, then drain.
  3. In a bowl, mix ricotta, gorgonzola, egg, salt, and pepper.
  4. Layer noodles, cheese mixture, spinach, mushrooms, and marinara sauce in a baking dish.
