Ingredients
- 9 lasagna noodles
- 2 cups low-fat ricotta cheese
- 1 cup crumbled gorgonzola cheese
- 1 egg
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups fresh spinach
- 1 cup sliced mushrooms
- 2 cups low-sodium marinara sauce
- 1/2 cup grated parmesan cheese
Instructions
- Preheat oven to 375°F (190°C).
- Cook lasagna noodles according to package instructions, then drain.
- In a bowl, mix ricotta, gorgonzola, egg, salt, and pepper.
- Layer noodles, cheese mixture, spinach, mushrooms, and marinara sauce in a baking dish.
- Repeat layers and top with parmesan cheese.
- Bake for 30 minutes or until bubbly and golden.
- Let cool for 5 minutes before serving.
Notes
- Use whole wheat noodles for extra fiber.
- Substitute gorgonzola with feta if preferred.
- Store leftovers in an airtight container for up to 3 days.
