A simple and healthy lemon chicken and potatoes recipe made in a crockpot. Perfect for a nutritious and easy meal.
Ingredients
- 4 boneless, skinless chicken breasts
- 1.5 lbs baby potatoes, halved
- 2 lemons, sliced
- 3 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup chicken broth
Instructions
- Place chicken breasts in the crockpot.
- Add halved baby potatoes around the chicken.
- Layer lemon slices and minced garlic on top.
- Drizzle with olive oil and sprinkle with oregano, thyme, salt, and pepper.
- Pour chicken broth over everything.
- Cover and cook on low for 6 hours or high for 3 hours.
- Serve warm.

- For extra flavor, add fresh rosemary.
- Adjust cooking time if using frozen chicken.
