Description

A simple and healthy lemon chicken and potatoes recipe made in a crockpot. Perfect for a nutritious and easy meal.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1.5 lbs baby potatoes, halved
  • 2 lemons, sliced
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup chicken broth


Instructions

  1. Place chicken breasts in the crockpot.
  2. Add halved baby potatoes around the chicken.
  3. Layer lemon slices and minced garlic on top.
  4. Drizzle with olive oil and sprinkle with oregano, thyme, salt, and pepper.
  5. Pour chicken broth over everything.
  6. Cover and cook on low for 6 hours or high for 3 hours.
