Ingredients
- 4 medium onions, peeled and quartered
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 lemon, juiced and zested
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp dried thyme
Instructions
- Preheat your oven to 200°C (400°F).
- In a bowl, toss the onions with olive oil, garlic, lemon juice, zest, salt, pepper, and thyme.
- Spread the onions in a single layer on a baking sheet.
- Roast for 30 minutes, stirring halfway, until golden and tender.
- Serve warm as a side dish.
