Description
A hearty and healthy twist on classic comfort food, combining the flavors of chili cheese dogs with pasta in a baked dish.
Ingredients
- 8 oz whole wheat pasta
- 1 lb lean ground turkey
- 1 can (15 oz) low-sodium black beans, drained and rinsed
- 1 can (15 oz) diced tomatoes, no salt added
- 1 cup low-fat cheddar cheese, shredded
- 1/2 cup plain Greek yogurt
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp black pepper
- 1/4 cup fresh cilantro, chopped (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Cook pasta according to package instructions, drain, and set aside.
- In a large skillet, brown the ground turkey over medium heat.
- Add black beans, diced tomatoes, chili powder, cumin, garlic powder, onion powder, and black pepper. Stir well.
- Simmer for 5 minutes, then remove from heat.
- Mix the cooked pasta with the turkey mixture.
- Transfer to a baking dish and top with shredded cheese.
- Bake for 15 minutes or until cheese is melted and bubbly.
- Remove from oven and let cool for 5 minutes.
- Top with Greek yogurt and cilantro before serving.
Notes
- Use whole wheat pasta for extra fiber.
- Substitute ground turkey with plant-based crumbles for a vegetarian version.
- Adjust spices to taste.
