Description

A hearty and healthy twist on classic comfort food, combining the flavors of chili cheese dogs with pasta in a baked dish.


Ingredients

  • 8 oz whole wheat pasta
  • 1 lb lean ground turkey
  • 1 can (15 oz) low-sodium black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes, no salt added
  • 1 cup low-fat cheddar cheese, shredded
  • 1/2 cup plain Greek yogurt
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • 1/4 cup fresh cilantro, chopped (optional)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook pasta according to package instructions, drain, and set aside.
  3. In a large skillet, brown the ground turkey over medium heat.
  4. Add black beans, diced tomatoes, chili powder, cumin, garlic powder, onion powder, and black pepper. Stir well.
  5. Simmer for 5 minutes, then remove from heat.
  6. Mix the cooked pasta with the turkey mixture.
  7. Transfer to a baking dish and top with shredded cheese.
  8. Bake for 15 minutes or until cheese is melted and bubbly.
  9. Remove from oven and let cool for 5 minutes.
  10. Top with Greek yogurt and cilantro before serving.
