Description
A fresh and flavorful salad combining crisp green beans, crispy bacon, and sharp cheddar cheese.
Ingredients
- 1 lb fresh green beans, trimmed
- 4 slices bacon, cooked and crumbled
- 1/2 cup shredded cheddar cheese
- 1/4 cup red onion, thinly sliced
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 tsp Dijon mustard
- Salt and pepper to taste
Instructions
- Blanch green beans in boiling water for 2 minutes, then transfer to ice water.
- Drain and pat dry the green beans.
- In a large bowl, whisk together olive oil, vinegar, mustard, salt, and pepper.
- Toss green beans, bacon, cheddar, and red onion in the dressing.
- Serve chilled or at room temperature.
Notes
- For extra crunch, add toasted almonds.
- Substitute turkey bacon for a lighter option.
- Best served fresh but can be refrigerated for up to 2 days.
