Description
A healthy and flavorful low-carb casserole made with cauliflower rice, taco-seasoned meat, and melted cheese. Perfect for a quick weeknight dinner.
Ingredients
- 1 head cauliflower, grated into rice
- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1/2 cup diced tomatoes
- 1/4 cup chopped onions
- 1/4 cup chopped cilantro
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a pan and sauté onions until soft.
- Add ground meat and cook until browned.
- Stir in taco seasoning and diced tomatoes.
- Mix in grated cauliflower and cook for 3 minutes.
- Transfer mixture to a baking dish and top with cheese.
- Bake for 15 minutes or until cheese melts.
- Garnish with cilantro before serving.
