Ingredients
- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup chopped cucumber
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup Kalamata olives
- 1/4 cup crumbled feta cheese
- 2 tbsp lemon juice
- 1 tbsp chopped fresh parsley
Instructions
- Preheat a grill or skillet over medium-high heat.
- Rub chicken breasts with olive oil, oregano, garlic powder, salt, and pepper.
- Grill or cook chicken for 6-7 minutes per side until fully cooked. Let rest for 5 minutes, then slice.
- In a bowl, combine cucumber, cherry tomatoes, red onion, olives, and feta cheese.
- Drizzle with lemon juice and toss gently.
- Divide the salad mixture into bowls and top with sliced chicken.
- Sprinkle with fresh parsley before serving.
