Description
A flavorful and healthy low carb Mexican soup packed with protein and vegetables.
Ingredients
- 1 lb ground turkey
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can diced tomatoes
- 4 cups chicken broth
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 1 avocado, sliced
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion, garlic, and bell pepper. Cook until softened.
- Add ground turkey and cook until browned.
- Stir in diced tomatoes, chicken broth, cumin, and chili powder.
- Simmer for 20 minutes.
- Season with salt and pepper.
- Serve topped with avocado slices and cilantro.

- Use lean ground turkey for lower fat.
