Description

A healthier version of the classic Maggiano’s lasagna with lower fat and calories but still packed with flavor.


Ingredients

  • 12 lasagna noodles
  • 1 lb lean ground beef
  • 1/2 lb Italian turkey sausage
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 jar (24 oz) marinara sauce
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 egg
  • 1 container (15 oz) part-skim ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cups shredded part-skim mozzarella cheese


Instructions

  1. Preheat oven to 375°F.
  2. Cook lasagna noodles according to package directions. Drain and set aside.
  3. In a large skillet, brown the ground beef, turkey sausage, onion, and garlic over medium heat. Drain excess fat.
  4. Stir in marinara sauce, diced tomatoes, basil, oregano, salt, and pepper. Simmer for 10 minutes.
  5. In a bowl, mix the egg, ricotta cheese, and Parmesan cheese.
  6. Spread a thin layer of meat sauce in the bottom of a 9×13-inch baking dish.
  7. Layer 4 lasagna noodles, half the ricotta mixture, and a third of the mozzarella cheese. Repeat layers.
  8. Top with remaining noodles, sauce, and mozzarella cheese.
  9. Cover with foil and bake for 25 minutes. Remove foil and bake for another 15 minutes.
  10. Let stand for 10 minutes before serving.

Notes

  • Use whole wheat lasagna noodles for extra fiber.
  • You can substitute ground turkey for beef.
  • Add spinach or mushrooms for more veggies.
