Description

A comforting and healthy chicken and rice casserole that’s easy to make and packed with flavor. Perfect for a family dinner.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup brown rice, uncooked
  • 1 cup low-sodium chicken broth
  • 1 cup frozen mixed vegetables
  • 1/2 cup plain Greek yogurt
  • 1/4 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, mix shredded chicken, uncooked rice, chicken broth, mixed vegetables, Greek yogurt, Parmesan cheese, garlic powder, onion powder, black pepper, and thyme.
  3. Pour the mixture into a greased casserole dish.
  4. Cover with foil and bake for 45 minutes.
  5. Remove foil and bake for another 15 minutes until the top is golden.
  6. Let it rest for 5 minutes before serving.

  • Use rotisserie chicken for quicker prep.
  • Swap brown rice for quinoa for a protein boost.
