A comforting and healthy chicken and rice casserole that’s easy to make and packed with flavor. Perfect for a family dinner.
Ingredients
- 2 cups cooked chicken, shredded
- 1 cup brown rice, uncooked
- 1 cup low-sodium chicken broth
- 1 cup frozen mixed vegetables
- 1/2 cup plain Greek yogurt
- 1/4 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, mix shredded chicken, uncooked rice, chicken broth, mixed vegetables, Greek yogurt, Parmesan cheese, garlic powder, onion powder, black pepper, and thyme.
- Pour the mixture into a greased casserole dish.
- Cover with foil and bake for 45 minutes.
- Remove foil and bake for another 15 minutes until the top is golden.
- Let it rest for 5 minutes before serving.
Notes
- Use rotisserie chicken for quicker prep.
- Swap brown rice for quinoa for a protein boost.
- Store leftovers in the fridge for up to 3 days.
