Description
A healthy and moist pumpkin bread sweetened with maple syrup, perfect for breakfast or a snack.
Ingredients
- 1 1/2 cups pumpkin puree
- 1/2 cup maple syrup
- 2 eggs
- 1/4 cup melted coconut oil
- 1 tsp vanilla extract
- 2 cups whole wheat flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan.
- In a large bowl, mix pumpkin puree, maple syrup, eggs, coconut oil, and vanilla extract.
- In another bowl, whisk whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Combine wet and dry ingredients. Stir until just mixed.
- Pour batter into the loaf pan. Bake for 50-55 minutes or until a toothpick comes out clean.
- Let cool before slicing.
Notes
- Use pure pumpkin puree, not pumpkin pie filling.
- Store in an airtight container for up to 5 days.
- Freeze slices for longer storage.
