Description

A healthy and moist pumpkin bread sweetened with maple syrup, perfect for breakfast or a snack.


Ingredients

  • 1 1/2 cups pumpkin puree
  • 1/2 cup maple syrup
  • 2 eggs
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • 2 cups whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, mix pumpkin puree, maple syrup, eggs, coconut oil, and vanilla extract.
  3. In another bowl, whisk whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Combine wet and dry ingredients. Stir until just mixed.
  5. Pour batter into the loaf pan. Bake for 50-55 minutes or until a toothpick comes out clean.
  6. Let cool before slicing.

Notes

  • Use pure pumpkin puree, not pumpkin pie filling.
  • Store in an airtight container for up to 5 days.
