Ingredients

  • 1 cup mashed sweet potatoes
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt


Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. Mix mashed sweet potatoes, maple syrup, coconut oil, eggs, and vanilla in a bowl.
  3. In another bowl, whisk flour, baking powder, baking soda, cinnamon, and salt.
