Description

A flavorful and healthy Mediterranean-inspired eggplant kafta casserole.


Ingredients

  • 2 large eggplants, sliced
  • 1 lb ground beef or lamb
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp cinnamon
  • 1/2 tsp paprika
  • 1/4 cup parsley, chopped
  • 1/4 cup pine nuts
  • 1 cup tomato sauce
  • 2 tbsp olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Brush eggplant slices with olive oil and roast for 15 minutes.
  3. Mix ground meat, onion, garlic, spices, parsley, and pine nuts.
  4. Shape the mixture into small kafta balls.
  5. Layer roasted eggplant in a baking dish.
  6. Add kafta balls and top with tomato sauce.
  7. Bake for 30 minutes.
  8. Serve hot.
