Ingredients

  • 9 lasagna noodles
  • 1 lb ground turkey
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 zucchini, sliced
  • 1 red bell pepper, diced
  • 1 cup spinach, chopped
  • 1 can (14 oz) diced tomatoes
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup low-fat ricotta cheese
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions.
  3. Brown ground turkey in a skillet over medium heat.
  4. Add onion, garlic, zucchini, and bell pepper. Cook until softened.
  5. Stir in diced tomatoes, oregano, basil, salt, and pepper.
  6. Layer noodles, turkey mixture, ricotta, and spinach in a baking dish.
  7. Repeat layers, ending with noodles.
  8. Sprinkle feta cheese on top.
  9. Bake for 25 minutes.
  10. Garnish with fresh parsley before serving.
