A fresh and flavorful Mediterranean pasta salad packed with vegetables, olives, and feta cheese. Perfect for meal prep or gatherings.
Ingredients
- 8 oz whole wheat pasta
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup kalamata olives, pitted
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Cook pasta according to package instructions. Drain and rinse with cold water.
- In a large bowl, combine tomatoes, cucumber, red onion, olives, and feta cheese.
- Add cooled pasta to the vegetable mixture.
- In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
- Pour dressing over salad and toss gently to combine.
- Refrigerate for at least 1 hour before serving.
Notes
- Store in an airtight container for up to 3 days.
- Add grilled chicken for extra protein.
- Substitute quinoa for pasta if desired.
