Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 carrots, sliced
  • 1 zucchini, chopped
  • 1 cup green beans, trimmed and cut
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and black pepper to taste
  • 1/4 cup fresh cilantro, chopped


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until soft (about 3 minutes).
  3. Add bell pepper, carrots, zucchini, and green beans. Cook for 5 minutes.
  4. Stir in diced tomatoes, vegetable broth, cumin, chili powder, and cayenne pepper.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Season with salt and black pepper.
  7. Garnish with fresh cilantro before serving.
