Ingredients
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 carrots, sliced
- 1 zucchini, chopped
- 1 cup green beans, trimmed and cut
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon cayenne pepper (adjust to taste)
- Salt and black pepper to taste
- 1/4 cup fresh cilantro, chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until soft (about 3 minutes).
- Add bell pepper, carrots, zucchini, and green beans. Cook for 5 minutes.
- Stir in diced tomatoes, vegetable broth, cumin, chili powder, and cayenne pepper.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Season with salt and black pepper.
- Garnish with fresh cilantro before serving.
Notes
- Adjust spice levels by reducing or increasing cayenne pepper.
- For extra protein, add cooked lentils or chickpeas.
