Description
A hearty and healthy Mexican-inspired casserole made with barley, ground turkey, and fresh vegetables.
Ingredients
- 1 cup barley, uncooked
- 1 lb ground turkey
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes
- 1 cup corn kernels
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- Salt and pepper to taste
- 1/2 cup shredded cheese (optional)
- Fresh cilantro for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Cook barley according to package instructions.
- Heat olive oil in a skillet and cook ground turkey until browned.
- Add onion, garlic, and bell pepper. Sauté until softened.
- Stir in black beans, diced tomatoes, corn, cumin, chili powder, paprika, salt, and pepper. Cook for 5 minutes.
- Combine cooked barley with the turkey mixture in a baking dish.
- Sprinkle cheese on top if desired.
- Bake for 20 minutes until heated through.
- Garnish with fresh cilantro before serving.
Notes
- Use quinoa instead of barley for a gluten-free option.
- Add jalapeños for extra spice.
- Store leftovers in an airtight container for up to 3 days.
