Ingredients
- 1 lb lean ground turkey
- 1 packet taco seasoning
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 bell pepper, diced
- 1 onion, diced
- 2 cups shredded cheese
- 6 whole wheat tortillas
- 1 cup salsa
- 1/2 cup Greek yogurt
Instructions
- Preheat oven to 375°F.
- Brown ground turkey in a skillet, then add taco seasoning.
- Mix in black beans, corn, bell pepper, and onion.
- Layer tortillas, meat mixture, salsa, and cheese in a baking dish.
- Repeat layers, ending with cheese on top.
- Bake for 25 minutes.
- Let cool slightly before serving with Greek yogurt.
