Ingredients
- 1 lb ground turkey
- 1 cup diced onions
- 1 cup diced bell peppers
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup salsa
- 1 tsp cumin
- 1 tsp chili powder
- 1 cup shredded cheddar cheese
- 1 bag tortilla chips
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, cook the ground turkey over medium heat until browned.
- Add the onions and bell peppers, cooking until softened.
- Stir in the black beans, corn, salsa, cumin, and chili powder.
- Layer the tortilla chips at the bottom of a baking dish.
- Spread the turkey mixture over the chips.
- Sprinkle the shredded cheese on top.
- Bake for 20 minutes or until the cheese is melted and bubbly.
Notes
- You can use ground beef or chicken instead of turkey.
- Add jalapeños for extra spice.
- Serve with sour cream or guacamole on the side.
