Ingredients

  • 1 lb ground turkey
  • 1 cup diced onions
  • 1 cup diced bell peppers
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup salsa
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 cup shredded cheddar cheese
  • 1 bag tortilla chips


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, cook the ground turkey over medium heat until browned.
  3. Add the onions and bell peppers, cooking until softened.
  4. Stir in the black beans, corn, salsa, cumin, and chili powder.
  5. Layer the tortilla chips at the bottom of a baking dish.
  6. Spread the turkey mixture over the chips.
  7. Sprinkle the shredded cheese on top.
  8. Bake for 20 minutes or until the cheese is melted and bubbly.
