A simple and healthy side dish featuring sweet potatoes glazed with savory miso paste. Perfect for any meal.
Ingredients
- 2 medium sweet potatoes
- 2 tbsp white miso paste
- 1 tbsp maple syrup
- 1 tbsp olive oil
- 1 tsp rice vinegar
- 1 tsp sesame seeds
- 1/4 tsp black pepper
Instructions
- Preheat oven to 400°F (200°C).
- Cut sweet potatoes into wedges or cubes.
- Mix miso paste, maple syrup, olive oil, and rice vinegar in a bowl.
- Toss sweet potatoes in the glaze until coated.
- Spread on a baking sheet and bake for 25-30 minutes.
- Sprinkle with sesame seeds and black pepper before serving.
Notes
- Use smooth white miso for best results.
- Adjust sweetness by adding more or less maple syrup.
- Store leftovers in an airtight container for up to 3 days.
