Description

A comforting and healthy turkey tetrazzini casserole packed with mushrooms and lean turkey for a guilt-free meal.


Ingredients

  • 2 cups cooked turkey, shredded
  • 8 oz whole wheat pasta
  • 1 cup mushrooms, sliced
  • 1/2 cup low-fat Greek yogurt
  • 1/2 cup low-sodium chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1 tsp olive oil
  • 1 clove garlic, minced
  • 1/2 tsp dried thyme
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F.
  2. Cook pasta according to package instructions, drain.
  3. Heat olive oil in a pan, sauté garlic and mushrooms until soft.
  4. Mix turkey, pasta, mushrooms, yogurt, broth, Parmesan, thyme, salt, and pepper in a bowl.
  5. Transfer mixture to a baking dish.
  6. Bake for 20-25 minutes until bubbly and golden.
  7. Let cool slightly before serving.
