Description
A comforting and healthy turkey tetrazzini casserole packed with mushrooms and lean turkey for a guilt-free meal.
Ingredients
- 2 cups cooked turkey, shredded
- 8 oz whole wheat pasta
- 1 cup mushrooms, sliced
- 1/2 cup low-fat Greek yogurt
- 1/2 cup low-sodium chicken broth
- 1/4 cup grated Parmesan cheese
- 1 tsp olive oil
- 1 clove garlic, minced
- 1/2 tsp dried thyme
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F.
- Cook pasta according to package instructions, drain.
- Heat olive oil in a pan, sauté garlic and mushrooms until soft.
- Mix turkey, pasta, mushrooms, yogurt, broth, Parmesan, thyme, salt, and pepper in a bowl.
- Transfer mixture to a baking dish.
- Bake for 20-25 minutes until bubbly and golden.
- Let cool slightly before serving.
Notes
- Use leftover turkey or rotisserie chicken for convenience.
- Substitute Greek yogurt with low-fat sour cream if preferred.
- Add spinach for extra greens.
