Ingredients
- 4 medium potatoes, diced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup crumbled feta cheese
Instructions
- Preheat oven to 400°F (200°C).
- Toss diced potatoes with olive oil, oregano, salt, and pepper.
- Spread on a baking sheet in a single layer.
- Roast for 30-35 minutes until golden and crispy.
- Sprinkle feta cheese over the potatoes before serving.
Notes
- Use fresh oregano if available for stronger flavor.
- For crispier potatoes, flip them halfway through roasting.
