Description

A healthy version of the classic Outback Steakhouse Walkabout Soup, packed with flavor and nutrients.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 pound lean ground beef
  • 4 cups low-sodium beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
  3. Add garlic and cook for 1 minute until fragrant.
  4. Add ground beef and cook until browned, breaking it up with a spoon.
  5. Stir in beef broth, diced tomatoes, paprika, thyme, and bay leaf.
  6. Bring to a boil, then reduce heat and simmer for 20 minutes.
  7. Remove bay leaf. Season with salt and pepper to taste.
  8. Serve hot.

Notes

  • For a thicker soup, add 1 tablespoon tomato paste.
  • Store leftovers in an airtight container for up to 3 days.
