A nutritious and delicious paleo salad bowl packed with fresh ingredients.
Ingredients
- 2 cups mixed greens
- 1 avocado, sliced
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup walnuts, chopped
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Instructions
- Wash and dry all vegetables.
- Chop the avocado, tomatoes, cucumber, and red onion.
- In a large bowl, combine mixed greens, avocado, tomatoes, cucumber, red onion, and walnuts.
- In a small bowl, whisk olive oil, lemon juice, salt, and pepper.
- Drizzle the dressing over the salad and toss gently.
- Serve immediately.
Notes
- Store leftovers in an airtight container for up to 2 days.
- Add grilled chicken for extra protein.
- Replace walnuts with almonds or pecans if preferred.
