Ingredients

  • 2 cups mixed greens
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup walnuts, chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper


Instructions

  1. Wash and dry all vegetables.
  2. Chop the avocado, tomatoes, cucumber, and red onion.
  3. In a large bowl, combine mixed greens, avocado, tomatoes, cucumber, red onion, and walnuts.
  4. In a small bowl, whisk olive oil, lemon juice, salt, and pepper.
  5. Drizzle the dressing over the salad and toss gently.
