Description

A creamy and comforting soup packed with fresh broccoli and rich cheese, inspired by Panera Bread’s famous recipe.


Ingredients

  • 4 cups fresh broccoli florets
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup diced carrots
  • 1/2 cup diced onions
  • 2 cloves minced garlic
  • 3 cups vegetable broth
  • 1 cup heavy cream
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add onions, carrots, and garlic. Cook for 3-4 minutes.
  3. Stir in flour and cook for 1 minute.
  4. Slowly whisk in vegetable broth, then add heavy cream.
  5. Bring to a simmer and add broccoli. Cook for 10-12 minutes.
  6. Stir in cheddar and mozzarella cheese until melted.
  7. Season with salt and pepper.
  8. Serve hot.

Notes

  • For a thicker soup, add more flour.
  • Use fresh broccoli for best texture.
  • Store leftovers in the fridge for up to 3 days.
