Description
A creamy and comforting soup packed with fresh broccoli and rich cheese, inspired by Panera Bread’s famous recipe.
Ingredients
- 4 cups fresh broccoli florets
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 cup diced carrots
- 1/2 cup diced onions
- 2 cloves minced garlic
- 3 cups vegetable broth
- 1 cup heavy cream
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Melt butter in a large pot over medium heat.
- Add onions, carrots, and garlic. Cook for 3-4 minutes.
- Stir in flour and cook for 1 minute.
- Slowly whisk in vegetable broth, then add heavy cream.
- Bring to a simmer and add broccoli. Cook for 10-12 minutes.
- Stir in cheddar and mozzarella cheese until melted.
- Season with salt and pepper.
- Serve hot.
Notes
- For a thicker soup, add more flour.
- Use fresh broccoli for best texture.
- Store leftovers in the fridge for up to 3 days.
